We modified the recipe to serve two with a little leftover by using only one pound of chicken, two carrots, one small onion and one small box of couscous. Next we made an amazing TOMATO CORIANDER SALAD . We served this over Mahi-Mahi fillets that we cooked for 20 minutes with olive oil and salt in the oven at 350 degrees.
