Algeria has a Mediterranean climate and the food is influenced by the original Berber tribesmen and by Turkish, French and Arab individuals. We made the countries national dish from the Berbers, COUSCOUS.  We modified the recipe to serve two with a little leftover by using only one pound of chicken, two carrots, one small onion and one small box of couscous. Next we made an amazing TOMATO CORIANDER SALAD . We served this over Mahi-Mahi fillets that we cooked for 20 minutes with olive oil and salt in the oven at 350 degrees. The lemon juice in the salad was perfect with the fish! It’s a keeper. Gourmed has sensational Mediterranean recipes for you to try.
